THE SPARKLER

2 oz. Empress 1908 Gin

1 1/2 oz. Santa Cruz Cranberry Nectar

1 1/2 oz. Mionetto Prosecco

1 oz. Sage & Citrus foam

To create a foam you will need the following items:  100g water, 20g sugar, 3gelatin, 2 egg whites, 100g lemon juice, & 2 sage leaves.

Immersion blender to whip.

1st step is to combine and dissolve sugar and gelatin in the 100g of water.  Then chill in fridge till cold.  Combine the syrup with the egg white and lemon juice. Mix with an immersion blender and chill in fridge till cold.  Whip again or use shakers to shake until foam consistency.   Your should have enough foam to make a batch of The Sparkler cocktails.

To make your SPARKLER cocktail combine Cranberry and Mionetto over ice.  Top with your citrus/sage foam.  Top with Empress 1908 Gin.  Garnish with a sage leaf if you have one handy.  Any fresh herbs will do.  Cheers!
